Boil and Bake `em

Fries. The ultimate potato temptation. When we get them from a drive through they are frozen then deep fried and then handed to us from a window in paper bags. Yum. Oven baked fries, although they are a tiny bit different, are infinitely better for you then fast food fries so try this recipe out and hopefully you will see that a drive through grease fest is not the only way to satisfy your potato craving :)

6-8 medium sized potatoes is enough for my family of four, but you will most likely have to adjust it for your families needs.

Preheat oven to 400 degrees. Wash potatoes and cover with water in a large pot. Bring to a boil and leave it there for 8 minutes or until for just pierces the first inch of potato. Drain potatoes the leave in strainer and cover with towel for 5 minutes. Cut into desired sizes. Remember the smaller they are cut the crispier they will be and vice versa. The potatoes will be sticky and that is what you want, so don`t panic :). Once cut cover with olive oil and favorite seasonings, my personal favs are: garlic powder, fresh ground pepper, onion salt, and fresh ground italian seasonings. Put on cookie sheet in on layer (do not overcrowd) and cook  for 30 minutes take them out flip the over and mix them around the put on top rack for 20- 25 minutes. Enjoy :)

Notes: When boiling anything  if you place a wooden spoon over the top of the pot it won`t boil over, try it :).
When you boil potatoes always start in cold water and I mean ALWAYS. If you start them in already boiling water the outside will be mushy by the time the inside is cooked.
